MAQAM — IMMERSION

A timeless parenthesis

Nestled in the heart of the historic Habous district, maQam invites you to travel back in time, in a riad brought back to life with passion. Here, every detail; from the zellige to the scent of spices; evokes the Morocco of the 1930s, that of childhood memories, shared meals, and the warmth of a home.

maQam is much more than a restaurant: it is a parenthesis, a refuge, a living tribute to the Moroccan soul.

A tribute to Moroccan hospitality

At maQam, every guest is welcomed like at home. Our servers don't just serve: they tell stories, guide, share. The service is discreet, attentive and always warm, faithful to ancestral Moroccan hospitality.

A restored heritage

maQam is the will to bring life back, To the forgotten walls of an old riad, patiently restored by the hand of craftsmen. And to the flavors of yesteryear, drawn from Moroccan family cuisine, as a living tribute to the recipes of our mothers and grandmothers.

The story of maQam

maQam was born from a dream: to create a place where the memory of Morocco is told through every stone, every dish, every detail.

This vision is carried by architect Raouf Arabany, native of Casablanca, more precisely from the Derb Sultan district, located in the Habous, the historic heart of the city. As a child, he walked these alleys daily to go to school, along the patinated walls of this historic neighborhood. Years later, this path would become the starting point of a life project.

At a pivotal moment in his career, Raouf feels a deep need to create a space where he could flourish while enhancing the cultural richness of his country. This is how the idea of maQam germinates: a restaurant, certainly, but above all a place of transmission. A response to a growing void in the city of Casablanca – that of the absence of traditional places capable of telling Morocco in its authenticity to visitors and locals alike.

The name maQam, which means "the place" in Arabic, reflects this will. maQam is a cultural crossroads, a living space where gastronomy, craftsmanship and memory come together to create an immersive experience. A landmark in the city, where we meet, where we savor, where we remember.
